Job Description

Position Overview:

MIKA is seeking experienced and highly skilled Pastry Chefs to assist the Executive Chef and the culinary team to execute Michael White’s culinary vision and standards in our category defining coastal Mediterranean restaurant. The Pastry Chef will be responsible for preparing a variety of desserts, pastries, and baked goods in a fast-paced setting, assist with the staff training and management, and ensuring adherence to quality and safety standards.

Key Responsibilities:

  • Collaborate with Michael White and the Executive Chef to create refined dishes that Showcase creativity, quality ingredients, and exquisite flavors.
  • Operating and managing the pastry section of the kitchen and liaising with the Executive and Sous Chefs to ensure a successful working environment.
  • Preparing ingredients and handling baking and other kitchen equipment.
  • Creating pastries, baked goods, and confections, by following a set recipe.
  • Ensure consistency and excellence in food presentation, taste, and portion control.
  • Manage inventory, procurement, and cost control to optimize food quality and profitability. 
  • Help recruiting, training, and mentoring kitchen staff, fostering a culture of continuous learning, growth, and teamwork.
  • Implement and enforce sanitation and safety procedures to maintain a clean, organized, and hazard-free kitchen environment.
  • Collaborate closely with the restaurant management team to achieve financial goals, enhance guest satisfaction, and uphold the restaurant's reputation.
  • Stay updated on industry trends, techniques, and best practices, continuously striving to elevate the culinary experience offered by the restaurant.

Qualifications:

  • Proven experience as a Pastry Chef or Junior Pastry Chef in a high-end, fine dining establishment.
  • Culinary school degree preferred, but not necessary
  • Minimum 2 years in a kitchen managerial role in a fast-paced, high-volume restaurant
  • Strong leadership skills with the ability to inspire and motivate a diverse team.
  • In-depth knowledge of various culinary techniques, ingredients, and international cuisines.
  • Solid understanding of kitchen management principles, including inventory control, cost analysis, and menu engineering.
  • Excellent communication, organizational, and problem-solving skills.
  • Ability to thrive in a fast-paced, high-pressure environment while maintaining composure and professionalism.
  • Ability to work a flexible schedule including nights, weekends, and holidays.
  • Ability to frequently lift/move 50 lbs.
  • Authorization to work in the United States.
